Kombucha (pronounced [kom-boo-cha]) is an energizing and delicious drink. Originating in East Asia somewhere between 1500 and 3000 years ago (or possibly way longer ago than that, who knows?), it is known as the “Immortal Health Elixir” by the Chinese.
Kombucha is a fermented beverage that has enormous health benefits. Naturally fermented foods used to be a very regular part of the human diet, but in modern times they have almost been eliminated- a situation that has led to huge health problems.
As it's made from tea, it inherits all of the wonderful benefits of tea including B vitamins, antioxidants, and polyphenols. It contains a colony of bacteria and yeast (commonly known as a “SCOBY” (symbiotic colony of bacteria and yeast) that are responsible for initiating the fermentation process once combined with sugar.
During the fermentation process, not only does kombucha become delightfully fizzy, it also becomes filled with a high concentration of B vitamins, digestive enzymes and probiotics, all of which are believed to be linked to the following health benefits:
Improved Digestion: Kombucha contains high concentrations of beneficial probiotics and enzymes which aid digestion.
Increased Energy: This is due, in part, to the concentration of B vitamins which are essential to a functioning body, but are lacking in most of us who eat a “modern” diet.

Cleansing and Detoxification: Glucuronic acid (GA), which is found in high concentrations in kombucha, is a well known detoxifier in the body. Glucuronic acid combines with toxic matter such as pharmaceuticals and environmental pollutants, allowing them to be excreted.
Reduced Joint Pain: Kombucha contains a number of substances that are believed to improve joint health. It also helps reduce overall body inflammation which is often the cause of joint pain.
